MEDITERRANEAN CHICKEN SALAD
Our March Healthy Eats recipe presents another quick and easy-to-prepare treat for you and your family to enjoy. Pesto, spinach, citrus and pita combine to give our Mediterranean Chicken Salad a fresh flavor that reminds you of a seaside escape.
1/4 cup low-fat mayonnaise
3 tablespoons of pesto
1 tablespoon lemon juice
1/8 teaspoon pepper
2 cups chopped, cooked chicken
1/2 cup grated carrot (about one medium carrot)
4 mini whole-wheat pita rounds, split
1 cup baby spinach leaves
- Combine mayonnaise, pesto, lemon juice and pepper in a medium bowl. Whisk until well-blended.
- Add chicken and grated carrots. Stir to combine ingredients and cover with dressing.
- Place spinach and chicken salad into pita rounds. Serve cold.
Recipe makes four sandwiches. Each serving is one sandwich and contains:
